OptiFerm is Ferrum Group’s fermentation optimization system for breweries that want to get more out of their existing fermentation setup. The solution combines external heat exchange, active recirculation and 360° mixing to reduce energy consumption, shorten cooling and fermentation time, and improve temperature control throughout the tank.

OptiFerm can be implemented in new brewery installations or as a retrofit upgrade to existing fermentation tank farms, including breweries already operating with jacketed fermentation tanks. This makes it possible to increase capacity and improve process performance without necessarily investing in additional tanks.

FERMENTATION OPTIMIZATION FOR MODERN BREWERIES

Fermentation is one of the most important and capacity-critical processes in brewery production. Tank availability, temperature control, yeast performance and cooling efficiency all have a direct impact on production output, energy consumption and product quality.

With OptiFerm, Ferrum Group offers a different approach to brewery fermentation. Instead of relying only on traditional cooling jackets, the product is actively circulated through an external heat exchanger and returned to the tank through a 360° mixer.

This creates a more homogeneous temperature throughout the tank, improves yeast suspension and gives the brewery a faster and more flexible fermentation process.

OptiFerm can be implemented in new brewery installations or as a retrofit upgrade to existing fermentation tank farms.

EXTERNAL HEAT EXCHANGE AND 360° MIXING

The core of OptiFerm is the combination of active recirculation, external heat exchange and 360° mixing.

The external heat exchanger provides efficient temperature control, while the 360° mixer ensures that the product is distributed evenly inside the tank. This helps eliminate cold and hot zones, supports efficient yeast suspension and allows the brewery to respond faster when process conditions need to change.
The result is a more controlled fermentation process with lower energy consumption, shorter cooling times and better use of the existing tank capacity.

RETROFIT EXISTING FERMENTATION TANKS

OptiFerm is not only relevant for new brewery installations.

The system can also be implemented as a retrofit solution for existing fermentation tank farms. For breweries already operating with jacketed fermentation tanks, OptiFerm provides a practical way to upgrade the existing setup with external heat exchange, active recirculation and 360° mixing.

This makes it possible to improve cooling performance, temperature control and production capacity without necessarily replacing the entire tank farm or investing in additional fermentation tanks.

In some cases, existing tanks with faulty or damaged cooling jackets may also be brought back into operation by using OptiFerm as an alternative approach to process cooling and temperature control.

OptiFerm can reduce cooling time significantly and support a shorter overall fermentation process. This improves the utilization of the fermentation department and helps the brewery increase output from the existing tank setup.

Increased fermentation capacity

For many breweries, fermentation tank capacity is a major production bottleneck.
By reducing cooling time and overall process time, OptiFerm can increase the utilization of existing fermentation capacity. This allows breweries to produce more without necessarily adding more tanks.

Homogeneous temperature throughout the tank

Traditional fermentation setups can create temperature differences inside the tank.
OptiFerm helps create a more uniform temperature distribution throughout the fermenter. This improves process control and creates more stable conditions for yeast activity, fermentation performance and product quality.

Efficient yeast suspension

The 360° mixer keeps yeast in homogeneous suspension during the fermentation process.
This supports better yeast utilization, more stable fermentation conditions and improved process performance. Efficient yeast suspension can also contribute to faster diacetyl reduction and better use of the brewery’s fermentation capacity.

Optimized yeast management

OptiFerm can support improved yeast management and product consistency.
Better yeast suspension and controlled process conditions can help improve yeast health and reduce yeast consumption per batch. Optimized yeast extraction can also reduce the load on centrifuges and filtration systems.
Controlled aeration can be integrated directly into the recirculation loop when required by the process.

Suitable for high-gravity brewing

OptiFerm is well suited for high-gravity brewing applications.
The combination of active recirculation, efficient mixing and precise temperature control supports demanding fermentation processes where yeast performance, process stability and cooling efficiency are critical.

Low- and non-alcoholic beer fermentation

OptiFerm also supports the production of low- and non-alcoholic beer.
By using selected yeast strains that only metabolize monosaccharides, breweries can produce beers with 0.5% and even 0.0% ABV directly in the fermentation process.
This can reduce or eliminate the need for expensive dealcoholization equipment. Production of 0.0% ABV beer requires oxygen injection within the circulation loop.

HYGIENE, CIP AND STERILIZATION

OptiFerm can also improve cleaning and hygiene routines in brewery production.

CIP cleaning can be performed directly through the 360° mixer, helping to ensure full cleaning coverage inside the tank. This can reduce the need for separate internal CIP equipment and help lower water, chemical and cleaning time consumption.

For tanks without cooling jackets, heat sterilization becomes possible, as the tank design is mechanically simpler and less exposed to thermal stress from traditional jacket construction.
